Ingredients: Peanuts – 250g Sugar – 250g / 1 cup and 3 tbsp Steps: Heat a heavy bottomed pan and dry roast the peanuts. Stir continuously. Once its done, transfer the peanuts to another bowl. Once cool, remove the peel. Heat a heavy bottomed pan and add sugar to the pan. Melt it by stirring continuously. Do not add water. Once it starts to melt, lower the flame. When the syrup turns golden, add the peeled peanuts and mix thoroughly. Switch off the stove. Transfer it immediately to an aluminum foil or a butter paper. Level it with a spatula and shape it in to shape of a bar. To avoid wastage of the leftover syrup in the pan, heat the pan on a low flame and melt the syrup. Pour this on to the peanuts. Let it cool completely. Then remove it from the foil paper and cut into small pieces. Enjoy the kappalandi mittayi. Note: I have tried to make this with jaggery a couple of times. However, it doesn't hold shape and breaks easily after cooling.
