Blueberry Crumble Cookies Recipe 115g butter 70g raw sugar 60g brown sugar 1 egg 1 tsp vanilla 200g plain flour 1 tbsp corn flour ¼ tsp baking powder ½ tsp bi-carb 90g blueberries 2 tbsp blueberry jam Crumble 45g butter 25g brown sugar 25g raw sugar 45g flour plain ¼ tsp cinnamon 1. Preheat the oven to 180°C. Line a cookie tray. 2. To make the crumble place all the ingredients into a small bowl and press together until it resembles breadcrumbs. Set aside. 3. For the cookies cream together the raw sugar and brown sugar until light and creamy. Add in the egg and vanilla and mix well. Mix through the flour, corn flour, baking powder and bi-carb. Carefully fold the blueberries through the mixture. Then gently swirl the blueberry jam through the mixture. 4. Roll the cookie dough into tablespoon amounts and place onto a cookie tray evenly spaced. Then lightly press a small amount of crumble on top of each cookie. 5. Bake for 12 minutes, allow to cool and enjoy.
