Veggie nuggets are delicious, tasty and crispy from outside and soft from inside. These are made with veggies of your choice combined with spices. For parents who are trying to include vegetables in their kid's meal. I’ll show you how easy it is to make in advance and serve them when they are back from school. You can even make them ahead of time, freeze them and air fry them just before serving. Enjoy these nuggets as a kids snack or as a party appetizer. The best part is it is almost oil-free because I made them using an air fryer. Ingredients: ------------- For Nuggets ------------- Potatoes - 4 Carrots( grated) - 1/4 cup Bell pepper ( finely chopped ) - 1/4 cup Cheese - 1/4 cup Sweet corn( boiled/frozen ) - 1/4 cup Coriander leaves (finely chopped) - 1/4 cup Italian seasoning - 1 tsp Cumin powder - 1 tsp Garam masala - 1 tsp Salt to taste Chilli powder - 1 tsp Oats powder - 1tsp Rice flour -1 tbsp Ginger garlic paste -1 tsp For slurry --------- Rice flour - 1 tbsp All-purpose flour - 1tbsp Black pepper -1 tsp Breadcrumbs - 1 cup Oil spray ( optional ) Steps: ------ 1. Wash, peel and boil the potatoes. While the potatoes are still warm, mash them with a fork or potato masher. 2. In a mixing bowl, add the mashed potatoes, all the vegetables(your favorite veggies) and the spices ( mentioned above). 3. Combine all the veggies and spices. Don't mix it for too long, it will become soft. 4. Take a small portion of the mixture and roll and flatten. 5. Repeat step 4 for the remaining mixture. Keep aside all the nuggets. 6. If the nuggets are sticky, refrigerate them for 30mins. 7. Preheat the air fryer for 10mins @ 320F 8. In another bowl, add all-purpose flour, cornstarch, black pepper, and salt. Add water in batches to make a free-flowing lump-free batter. 9. Dip the nuggets in the batter and coat them well. 10. Now, place the batter coated nuggets on the bread crumbs. Sprinkle the bread crumbs over the nuggets to coat well. 11. Repeat step 9,10 for the remaining nuggets. 12. Open the air fryer basket and place the nuggets. Spray the oil ( optional). 13. Air fry for 10mins. Once the timer comes down, you can hear the beep sound. Open the basket and flip over the nuggets. 14. Cook again for 10mins. Remove the golden brown nuggets from the basket. 15. Serve the Crispy and tasty veggie nuggets with tomato ketchup.
