Vada pav is a most famous Maharashtrian street food snack or you can call it as Mumbai's burger. The patty inside is vada made of spicy potato filing coated with gram flour and deep fried. It is sandwiched between pav or bun and served hot with red chutney and fried green chillies. You can have vada pav at any time of the day. So learn how to make this tasty snack Ingredients – For Coating – •1 & 1/2 cup Besan / gram flour • 2 tbsp Rice flour • 1 tbsp red chili powder • Turmeric powder • Salt to taste • A pinch Baking soda • asafotida • Water For Stuffing – • 1 tbsp Oil • 1/2 tsp Mustard seeds • A pinch Asafoetida • 6 – 8 Curry leaves • Chili - ginger -,garlic paste (5-6 garlic cloves, an inch piece of ginger and 2-3 green chilies) • Turmeric powder • 1/2 kg, boiled, peeled, mashed Potatoes • Salt to taste • 1/2 tsp red chili powder • Finely chopped Coriander leaves. For Vada – • Oil for frying Method – For coating - • In a mixing bowl, take besan. • Add rice flour, turmeric powder, salt, asafotida red chili powder and Mix well. Add water. • Prepare batter with medium consistency. • Take care that no lumps should be formed. Coating is ready. • add soda just a minute before frying For stuffing – • Heat a pan on medium heat. Add oil. • Add mustard seeds. Let it crackle. • Add asafoetida, curry leaves and chili, ginger garlic paste. Mix well. Add little corriander leaves fry well. add potatoes Fry for a minute. • finish with salt and remaining corriander leaves • Turn off the heat . • Stuffing is ready. • Take a big spoon of stuffing and roll it in a ball shape for vada. For vada – • Heat the oil on medium heat. • Mix the previously prepared batter well again. • Dip the vada in the batter. Coat the batter from all sides and fry it. • Fry from both sides until the vadas get reddish color. • Once done, remove form oil. Serving - • While serving • Put vadain between the pavand add red chutney and serve with fried green chillies
