Enjoy! xoxo~Nicole Springform Pan: https://amzn.to/2DL041o Lily's Baking Chocolate: https://amzn.to/2vzrToL Lakanto Monkfruit Sugar Substitue: https://amzn.to/2GTZ63H Keto Chocolate Cheesecake: Ingredients: Crust: 1 3/4 cup almond flour 3 TB cocoa powder 3 TB monk fruit sweetener (I use Lakanto) 1/3 cup melted butter 1 TS vanilla extract Filling: 8 oz no sugar added chocolate (I use Lily's) 3 blocks cream cheese (softened) 1 1/4 cup powdered sweetener (I use Swerve) 1 TS vanilla extract Directions for Chocolate Crust: In a large bowl, sift your almond flour, cocoa powder, and monk fruit sweetener. In a small bowl, melt your butter and add it plus your vanilla extract to your dry ingredients. Stir well! Line your springform pan with cut parchment paper. Press your crumbs down evenly in the pan and set in the fridge to chill while making the filling. Directions for Filling: Melt your chocolate using a double boiler. With your hand mixer, beat the softened cream cheese until fluffy. Add your powdered sweetener and continue to beat together. Then add the vanilla extract and melted chocolate. Beat until the chocolate is incorporated well into the cream cheese. Spread your filling on top of the chocolate crust evenly. Cover and let chill in the fridge for at least 2 hours before serving.
