Check out more amazing Slimming World recipes, meal ideas, and healthy living tips over at Slimming World Magazine https://www.slimmingworld.co.uk/magazine 🥢 Ingredients 100g dried rice vermicelli noodles Low-calorie cooking spray 1 onion, finely sliced 2 red peppers, deseeded and finely sliced 100g baby corn, halved lengthways 2 garlic cloves, crushed 2cm piece fresh ginger, grated 2 tsp mild or medium curry powder 200g frozen Quorn Vegan Pieces (or tofu chunks) 2 tbsp soy sauce (or tamari for gluten-free) 2 spring onions, finely sliced 🔥 Method Cook the noodles according to the pack instructions. Drain, rinse and cool with cold water. This removes starch and keeps the noodles from sticking Stir-fry the veggies Spray a non-stick wok or frying pan with low-calorie cooking spray. Add the onion, peppers, and baby corn. Stir-fry for 4–5 minutes until they start to soften. Add flavour Add the garlic, ginger, and curry powder with a splash of water. Stir-fry for another 2 minutes until fragrant. Cook the protein Add the Quorn Pieces and 50ml of just-boiled water. Stir-fry everything for 5 minutes until heated through. Combine and serve Add the noodles and soy sauce. Stir-fry for 5–6 minutes until everything is piping hot. Sprinkle over sliced spring onions and serve! 💡 Slimming World Tips Swap Quorn for tofu or edamame beans for variety. Add chilli flakes or sriracha for extra spice.
