🫒 How Olive Oil Is Made The process of making olive oil begins with harvesting the olives. Once the olives are picked, they are washed to remove any dirt or leaves. Next, the olives — including the pits — are crushed into a thick paste. Traditionally, large stone mills were used for this step, but today, most producers use modern steel crushers. After crushing, the olive paste goes through a process called malaxation, which means slowly mixing the paste to help the tiny oil droplets combine. This step usually lasts about 30 to 40 minutes. Then, the mixture is pressed or spun in a centrifuge to separate the oil from the water and solid parts of the fruit. Finally, the pure olive oil is filtered and stored in stainless steel containers to preserve its freshness before it’s bottled and sold. The result is extra virgin olive oil, a natural and healthy product that keeps the flavor and aroma of fresh olives.
