Creme Brulee Cheesecake. The base is my perfect New york cheesecake. That is the perfect creamy consistency I've been making for decades However, I saw some restaurant was bruleeing their cheesecake to serve, and I thought that is brilliant. I already have the perfect cheesecake recipe! So this recipe is a two for one. Amazing cheesecake on its own, served with fruit, chocolate, or a fruit coulis. Whatever you like! I think the creme brulee topping is a show stopper, though, and it's so easy to finish off with. Crust: 1 stick of butter, melted 2 cups graham cracker crumbles 1/3 cup sugar pinch of salt Press into 9" springform pan, wrap the bottom with foil Cheesecake: 3 lbs cream cheese 1 1/2 cup sugar 1 Tablespoon Vanilla bean paste 1 teaspoon vanilla extract 3/4 cup heavy cream 4 eggs Cream everything together until smooth and pour into the crust. You can use only vanilla extract, I like both vanilla bean paste and extract together. Bake in a water bath for 75-80 minutes @ 350° F. The sides will be set, and the center will be jiggly. Do not overcook. Remove from the oven once baked and leave it sit in the water bath to cool, about an hour. Transfer the cheesecake to the fridge to chill overnight. It really needs plenty of time to chill, minimum of 6 hours, but strongly recommend just letting it sit overnight When cutting, use a knife dipped in hot water and wipe the blade between cuts to achieve beautiful smooth pieces. Brulee: Sprinkle white sugar on top and use a brulee torch to caramelize the sugar. Make sure to move the torch around constantly so you don't burn the sugar. the sugar will instantly cool into a hard sugary caramel crust. Turn on cc for subtitles! Thank you!
