Once the milk comes to a boil, add the lemon juice or vinegar and stir well. This will curdle the milk and separate the whey. Strain the curdled milk through a muslin cloth or a cheesecloth to remove the whey. Rinse the paneer with fresh water to remove any traces of lemon juice or vinegar. Gather the ends of the cloth and squeeze out any excess water. Knead the paneer on a clean surface for about 5-7 minutes until it becomes smooth and soft. Divide the paneer into small portions and roll them into smooth balls without any cracks. Keep them aside. In another pot, add 2 cups of sugar and 6 cups of water along with the green cardamom pods and saffron strands (if using) and bring it to a boil. Once the sugar dissolves, lower the heat and add the paneer balls to the syrup. Cover the pot and let it simmer for about 10-15 minutes on low heat. The paneer balls will expand in size as they cook and soak up the syrup. Turn off the heat and let the rasgullas cool down completely in the syrup. Once cooled, transfer the rasgullas to a serving bowl along with some syrup. Serve chilled. Your delicious Rasgullas are ready to be served! Recipe: In a thick-bottomed pan, heat the milk and bring it to a boil. Add a few strands of saffron to the milk and let it simmer for a few minutes, allowing the saffron to release its color and flavor into the milk. Once the milk has reduced slightly, add the crumbled paneer and grated coconut to the pan. Stir well and let it cook on medium-low heat, allowing the flavors to blend and the mixture to thicken. Gradually add milk powder to the mixture, stirring continuously to avoid any lumps. This will help thicken the mithai further and give it a creamy consistency. Continue cooking the mixture until it thickens and starts to leave the sides of the pan. At this stage, the mithai should have a smooth, fudge-like consistency. Taste the mithai and adjust the sweetness according to your preference by adding sugar or condensed milk if needed. Once the desired consistency and sweetness are achieved, remove the pan from the heat and let it cool slightly. Grease a plate or a shallow dish with ghee (clarified butter) and transfer the mithai mixture onto it. Smooth out the surface with a spatula. Garnish the top with some more saffron strands and chopped nuts like almonds or pistachios to add a touch of elegance and crunch to the dessert. Allow the mithai to cool completely and then refrigerate it for a few hours to set.
