[00:23] Blanch the spinach in hot water for 2-3 minutes. [00:33] Immediately transfer the spinach to cold water. [00:42] Drain the spinach and grind it into a coarse paste. [00:46] Peel and cut the potatoes into cubes. [00:54] Fry the potatoes in hot oil until 70-80% cooked and golden brown. [01:03] Heat mustard oil in a pan (kadhai). [01:14] Add cumin seeds, dried red chillies, and asafoetida. [01:31] Add chopped garlic and sauté. [01:43] Add chopped ginger and green chilli, sauté. [04:50] Transfer the sabji to a serving bowl. [05:04] Prepare the tadka (tempering): heat ghee in a small pan. [05:13] Add cumin seeds, chopped garlic, and a dried red chilli to the ghee.
