Crab cakes Benedict will become your brunch go to. Chef Frank shows you how! Crab cakes on toasted English muffins, poached eggs topped with Hollandaise sauce. RECIPE... MAKES four 4.5 oz. Crab cakes CRAB CAKES...Ingredients 1 pound lump crab meat 1 c. mayo 1/4 c. plain bread crumbs 1 TBSP Old Bay 2 tsp yellow mustard 2 tsp Worcestershire 1 egg 2 TBSP freshly minced parsley 1TBSP lemon juice Crab Mix...directions Combine 1 cups mayo, 2 tsp FRESH lemon juice. 1 tsp Worcestershire sauce, 1 egg, 2 tsp yellow mustard, 1 TBSP Old Bay Crab cake...directions 1. Drain crab, remove moisture by gently squeezing the crab meat. 2. Add 1/4 cups bread crumbs, 2 TBSP fresh minced parsley, 3. Add 1/2-3/4 cup of crab mix. Start with 1/2 cup first to make sure they don't get too wet. 4. Combine gently with YOUR HANDS, try to keep your lumps in tact. 5. Form crab cakes by gently rolling and tossing the crab meat with your hand. 6. Bake in for 12-15 minutes at 400 degrees. To brown the top place under broiler for 1-2 minutes. Hollandaise Sauce Ingredients 1 stick salted butter 2 egg yolks 2 tsp lemon juice (preferably fresh) pinch cayenne pepper Hollandaise Sauce...directions 1. Over med low heat, melt butter. Hold on low temp. 2. In small food processor blend cold eggs yolks for 30 seconds. 3. Turn on food processor and slowly add a warm stream of melted butter. 4. After all of the butter has been added, add lemon juice and cayenne pepper. 5. Combine for 10 seconds in food processor. Hold at room temp for service. Poached Eggs...directions 1. In large pan bring 1 1/2 gallons of water to a simmer. You should see the release of small bubbles being regularly released from the bottom of the pan. 2. Add 1 TBSP white or cider vinegar to water. 3. Crack each egg into it's own separate ramekin. 4. Gently add each egg (one at a time) to the water. 5. Allow egg to cook undisturbed for 1 minute gently flip egg being careful not to break the yolks. 6. After 4 mines gently remove egg to dry on a paper towel. 7. Plate 1 sliced then grilled English muffin. 8. Place crab cakes on top of muffins. 9. Placed warm poached eggs carefully on top of the cakes. 10. Top with hollandaise sand chives. 4.
