Made with just three simple ingredients—egg whites, sugar, and ground pumpkin seeds—they’re a great nut-free alternative to classic almond cookies. I wanted to create a gluten-free, nut-free cookie, and guess what? It worked! These cookies were a hit with my friends and family. I used raw pumpkin seeds, ground them in my NutriBullet, then whipped two egg whites, added half a cup of sugar, mixed everything, and chilled the dough for 15–30 minutes. To bake, scoop, roll into balls, flatten, and bake for 13–15 minutes. The result? Crispy edges, a soft centre, and a naturally green hue—don’t be put off by the colour!
