Heat for a few minutes to soften, add the erythritol and stir over a low heat until the erythritol has dissolved. Once the erythritol has dissolved and the liquid is clear, boil steadily for about 6 minutes, or until at setting point. Set aside to cool for 10 minutes.Transfer into a bowl. The Shells Add in butter , cream cheese and powdered erythritol. Just using a spatula, mix everything together to combine. Then add in egg. Again mix to combine. Add in almond flour, coconut flour, xanthan gum. Mix until combine then roll out the dough and chill in the fridge for 2 hours or until it's firm. Take a piece of dough and press it evenly. Cut off excess dough. Using a fork, prick the base so that it doesn't puff up while baking. Bake in a preheated oven at 170º for 15 minutes. Remove from the oven and leave to cool completely. Set aside. The Filling Add in cream cheese and powdered erythritol. Mix until just combined. Then add in egg, vanilla extract and mix to combine also. Finally add in whipping cream and mix everything together. Assembling Take 1 tbsp of cream cheese mixture and add some red food coloring to it. Mix well and set aside. Take 1 tart shell and put some strawberry jam in it. Then spoon in the cream cheese mixture on top until the rim of the tart. Using a toothpick, dip it in red colored cream cheese and make a circle heart shape. Repeat with the rest of the tarts. Place them on a baking tray. Bake in a preheated oven 170ºC for 15 minutes or until the center sets. Remove from the oven and cool completely.
