Creamy Italian Spaghetti w/Plant-based Meats|One Pot Meal Ingredients 1 tbsp cooking oil 1 tbsp butter 1 bell pepper (any color), diced 1 medium yellow onion, diced 1/8 tsp salt 1/8 tsp black pepper 2 tbsp minced garlic or 7 cloves 1 lb Plant-based ground beef 8oz Plant-based Italian sausage 1 tbsp Italian seasoning 1 (15oz) can diced tomatoes 4 cups vegetable broth 16 oz uncooked spaghetti 1/4 tsp salt 1/4 tsp black pepper 1 cup coconut milk 16 oz mozzarella cheese, shredded parsley to garnish (optional) Instructions Heat oil & butter in a large Dutch Oven over medium high heat. Add in diced peppers and onions. Season with a pinch (1/8 tsp) salt & black pepper. Saute 3-5 minutes until softened. Stir in garlic for 1 minute. Add in and break up plant based meats. Cook 7-8 minutes until done. Add in Italian seasoning, diced tomatoes, broth, and the spaghetti. Stir together over high heat, until it comes to a simmer.NOTE: taste the liquid for additional salt & black pepper, if needed. Lower heat to medium and cook for 13 minutes.NOTE: Lift lid two times during cooking time and stir. Check liquid level also. Stir in coconut milk and place lid back on for 5 minutes or so until pasta is tender to your liking. Stir in shredded cheese. Enjoy! #cooking #plantbasedmeat #pastadish
