How to Make Nougat with or without Honey Recipe

I did an experiment making Nougat with Honey and then Nougat without Honey to see the different and which was better taste-wise and which would be better for Christmas gifts etc - both full recipes written below. Recipe for Nougat with Honey : In a bowl, whisk one egg white until it forms soft peaks In a pan, add 2 tablespoons of water, 1/4 cup of honey and 3/4 cup of sugar Bring to the boil until it reaches about 150oC (I was told 137oC however this didn't quite set well enough). Very slowly pour the liquid mixture in with the egg white while beating it and mix for 5 minutes. Pour in whatever fruit or nuts you want to add (about 1.5 cups is a good amount) and mix as well as you can! Put in a lined and greased loaf tin and put another layer of greased non-stick paper over the top and leave on the bench to set for at least 3 hours, or overnight. Recipe for Nougat without Honey : In a bowl, whisk one egg white until it forms soft peaks In a pan, add 2 tablespoons of water, 2 tablespoons of Glucose Syrup, 1 cup of sugar and 1 teaspoon of Vanilla Essence Bring to the boil until it reaches about 150oC Very slowly pour the liquid mixture in with the egg white while beating it and mix for 5 minutes. Pour in whatever fruit or nuts you want to add (about 1.5 cups is a good amount) and mix as well as you can!
