Ingredients: 1lb fresh salmon filet, skin on & deboned 1/2 cup granulated sugar 1/2 cup kosher salt 1tbsp whole black peppercorn 1/2tbsp fennel seed 1tbsp cup fresh dill, rough chopped 1/4 cup gin Directions: Mix the salt and sugar in a bowl. Pour half of the salt/sugar mix in the bottom of a 2" deep glass dish. Sprinkle half of the pepper and fennel seed over the salt/sugar mix. Lay the salmon, skin side down onto the bed of salt/sugar, and pour the rest of the salt/sugar mix over the top of the salmon. Make sure to completely cover the salmon filet. Sprinkle the rest of the pepper and fennel seed on top of the salmon. Carefully pour the gin over the salmon. Try to remove as little of the salt mix off the salmon as possible. Finish off the salmon with the dill. Too cure the salmon, place plastic wrap on top of the salmon and press down. Place a heavy weight object on top of the salmon. Put the salmon in the fridge for 2-5 days. Remove salmon every 24 hours and flip over. When ready, remove the salmon from the container and wipe off as much of the seasoning as possible. Slice into thin strips. Serve with a bagel, cream cheese, capers, and red onion. Enjoy :)
