These delicious Persian rice flour cookies , also known as shirini Berenji, originated from Iran. These gluten free cookies, made with rice flour, sugar syrup and butter and Flavoured with cardamom powder and rose water. Baking powder and baking soda is not added .Snow White colour is the main attraction of these cookies and garnished with poppy seeds, pistachios .Usually egg yolks are added to this recipe, but I wanted to make eggless cookies, so I have added yogurt . Rice dough is refrigerated for 4 to 6 hours or overnight, before baking. Sugar syrup. Sugar-1/2 cup + 2 tbsp. Water- 1/2 cup Chopped pistachios for garnish Notes. White sugar is added to make these white beauties .Sugar syrup should remain 3/4 cup after boiling. Add some lemon juice to prevent sugar syrup from crystallizing, while making it .but lemon is not a part of this recipe . Snow White colour is the main attraction, so take care of the baking time. Usually bake for 15 minutes In a preheated oven at 180 degrees Celsius. But keep an eye on it after 12 minutes Remove from the oven when the bottom of the cookies become light brown. Keep it in the fridge for 4 to 6 hours or overnight. Then remove it and easily roll it into round cookies. Keep them in an airtight container, because rice absorb moisture fast and turn soggy.
