I know I am supposed to be sharing healthy recipes, but we all know you are going to cheat on your diet lol. So if you are going to cheat anyway, it might as well be with something delicious! Then blind bake your pie crust in a 375F degree oven for 25 minutes, then after removing the pie weights, bake for another 6-10 minutes or until slightly golden. Remove and set aside to cool completely. In a medium saucepan, combine sugar and flour and mix to ensure there are no clumps. Whisk in milk until evenly incorporated. Cook over medium heat stirring constantly, until the mixture thickens and boils. Simmer for an additional 2 minutes to cook out the flour taste. In a separate bowl, slowly add ½ cup of the cream mixture to the egg yolks whisking constantly. It is important you do this slowly and gradually to prevent curdling. Once fully mixed, add the tempered eggs into the saucepan. Cook over medium heat, allowing it to simmer while constantly stirring, for at least 4 minutes. This will ensure the custard will set later. Add butter and vanilla and mix well until butter is melted completely. Set aside and allow to cool slightly. In prepared pie crust, spread about 2 tablespoons of the custard on the bottom of the crust. Add about 3 quarters of the sliced bananas, being sure to fill all gaps. Add half of the custard mixture and gently smooth it over the bananas. Add the remaining bananas in an even layer, and proceed with adding the remaining custard. Refrigerate at least 4 hours or overnight. Top with whipped cream and bananas for garnish. Enjoy!
