In a large bowl, whisk together 2 tbsp honey, 2 tbsp avocado oil, 1 tbsp sesame oil, 1–2 tbsp sriracha, and 2 tbsp soy sauce until smooth. Add the cubed salmon and gently toss to coat evenly. Let it sit for 10–15 minutes while you prepare the rice or preheat your oven/air fryer. Cook according to your preferred method (oven or air fryer instructions coming next). 🧅 Quick Pickled Red Onion Ingredients: 1 cup water 1 cup rice vinegar 2 tbsp honey 1 red onion, thinly sliced Instructions: In a small saucepan, combine 1 cup water, 1 cup rice vinegar, and 2 tbsp honey. Bring to a gentle simmer, stirring until the honey dissolves. Place the thinly sliced red onion in a heat-safe bowl or jar. Carefully pour the hot liquid over the onions until fully submerged. Let sit for at least 20–30 minutes before serving. The longer they sit, the brighter pink and more flavorful they become. 🥒 Quick Pickled Cucumber Salad (Cold Method – Best for Bowls) Ingredients: 2 cups cucumber, thinly sliced (English or Persian work best) 1/2 tsp kosher salt 1/4 cup rice vinegar 1 tbsp honey 1 tsp sesame oil 1–2 tsp soy sauce Optional: red pepper flakes or sliced green onion Instructions: Place the sliced cucumbers in a bowl and sprinkle with 1/2 tsp kosher salt. Let sit for 10–15 minutes to draw out excess moisture. Drain off the liquid and gently pat dry.
