(i.e., 1 1/3 cups) • More flour for dusting, and whole wheat is preferred Process (step by step version) • Mix all dry ingredients in a bowl, add the water, mix to form a dough. • Cover and let stand 1 hr. (Meanwhile, at the 45-minute mark, put an empty Dutch oven with lid, into the oven, and preheat at 475 deg. F. (if you do not have a Dutch oven, any oven container will do, if it is big enough to handle the bread dough and it must have a lid) • Then, remove the dough and place it on a lightly floured surface. With floured hands, do a “4-fold” – meaning, grab one end of the dough, lift it and stretch it over, folding it towards the middle. Do the same thing to the other side (lift and stretch it over to the middle). Rotate the dough and do the same thing on the other 2 sides. (If you want to do more than 4 folds, you can, do up to 8 in total if you want) • With whole wheat flour (optional regular all-purpose white flour) generously dust the inside of your bread banneton all over. Place dough inside the banneton, lightly dust the top of the dough with flour and cover 15 minutes • Using oven mitts, remove hot Dutch oven from your oven (being very careful as it will be very hot). Carefully remove the dough from the banneton by gently tilting it, and place in Dutch oven. Put lid on and place back into your 475 deg. F oven, bake 30 minutes with lid on • Then, remove lid and bake for 15 more minutes with lid off • Remove from oven – bread is now ready (however, it is best to let it sit 15 minutes (or longer) before cutting into it. Enjoy Process – short version • Mix dry ingredients, add water, form dough, cover let stand 1 hr. (Meanwhile, at 45-minute mark, preheat your oven with an empty Dutch oven and lid inside) • Do a “4-fold”, place in a floured banneton, cover, let stand 15 mins • Place dough in Dutch oven, bake 30 minutes lid on, then 15 minutes lid off. • Enjoy Notes/Variations • If you want to use some rye or whole wheat flour, you can.
