Order Mloukhia for Wed: rich & flavorful stew made from jute leaves is a traditional Middle Eastern delicacy that always reminds my clients of home. The tender chicken or lamb cooked in a broth with garlic, coriander, and other spices creates a comforting and satisfying meal. Ad by @papayafm recipe 1 box 400 gram of Naim brand Mloukhia(Jews mellow) soaked cleaned and squeezed out until there’s no more mucky water. Soak and squeeze leaves 10 times at least an hour between each soak. Chicken broth 2 whole Chickens Onion Carrots 2 Bay leaves Salt Pepper 5 stalks of parsley 8-10 cups of water 1 jalapeño Final herbs (this step will be the final stop and you will add these herbs at the end of your cooking process when you add your cooked chicken) 3 heads (not cloves) of garlic 3 Large bunches of cilantro with partial stems chopped 1/2 cup clarified butter or 1/2 cup regular butter with 1 tablespoon of corn oil. Before you begin cooking, it is essential to properly prepare your mloukhia leaves. Soak, wash, squeeze, and thoroughly clean the leaves until the slimy texture is gone and the water runs clear. Begin by boiling chicken stock ingredients until you have a flavorful broth then remove chicken from the broth and debone the chicken. Separate the fat and skin from the chicken, then finely chop the fat, skin, and onions until the fat is finely chopped. Add clarified butter (ghee) to a large pot along with chicken fat and mloukhia leaves. Sauté the ingredients before adding the chicken broth and jalapeño. Allow the leaves to boil in the broth over medium heat for approximately 2-3 hours or till tender. In a separate sauté pan, melt clarified butter and add chopped garlic. Cook the garlic until aromatic, then add chopped cilantro and cook until translucent and aromatic. Once ready, add the garlic and cilantro mixture to the pot of mloukhia. Finally, add the chicken and simmer until the flavors are perfectly blended. Serve the mloukhia over a bed of rice pilaf, garnished with lemons and diced jalapeños for an extra kick.
