Dried anchovies are a pantry staple in the Korean kitchen. They have been boiled in saltwater and dehydrated so are a fully cooked product. You can make broth for soup dishes, you can grab some for an easy, salty snack or you can stir-fry them for a tasty side dish. Whatever you do to them, they cook up quick. It's a perfect ingredient to use on busy weeknights (or busy any nights) to get something on the table. Frying dried anchovies will get rid of any "fishy" smells. If you want to just snack on them plain or dipped in GOCHUJANG, you can toast them a bit in a dry pan first to lessen that ocean-scent. ✨This 3-ingredient wonder can handle substitutions: Oil ➡ Butter Salt ➡ Soy Sauce Sugar ➡ Honey, Molasses, any sweetener you like. Extra: Add garlic, spicy peppers, chop up some dried fruit. 💫Level Up: Add walnuts/almonds to make it even better (excellent bar snack). You can add a bit of cooking wine to further help rid of "fishy" smells. Drizzle with sesame oil and garnish with toasted sesame seeds. On one hand, it's chock-full of omega-3 which is known to be good for the heart, thyroid, eyes and there's even talk of it being able to prevent Alzheimer's (hey that's what they're saying, don't shoot the messenger). It also contains lots of vitamins and minerals to build strong bones. On the other, anchovies and sardines naturally create Domoic Acid in the intestines which is not good for human consumption at higher levels. That is why many Koreans insist on gutting every little anchovy if possible. That prep work is a major pain in the butt (this one is from torturous first-hand experience). Everything in moderation, guys. If we took all the information of what MAY happen, no one would eat canned tuna (mercury) or go to the hospital for accidentally swallowing some apple seed (cyanide).
