SPICY RED CHILLI | तीखी लाल मिर्च 2 NOS. (OPTIONAL) SALT | नमक 1 TSP HING | हींग 1/4 TSP Method: Add the chana & urad dal into a pan & toast them over low flame until fragrant & then add the sesame seeds & toast them over low flame until they get slightly golden in colour & then transfer them into a bowl & cool them down completely. Meanwhile add the chillies in the same pan & toast them over low flame until they get hot & crispy, then transfer them into a separate bowl & let them cool down. Once cooled, break the stalks of the chillies & add them into a mixer grinder jar, grind the chillies into a fine powder. Further add the toasted dals, sesame seeds, asafoetida & salt, grind everything coarsely, make sure you don’t make a fine powder. Your gunpowder / milagai podi is ready, store it in an airtight container, keep it in the fridge & use it for a few months. Uttapam Ingredients: Batter UPMA RAWA | उपमा रवा 1 CUP SOUR CURD | खट्टा दही 1/2 CUP WATER | पानी 1 CUP SALT | नमक TO TASTE ENO | इनो 1 TSP Ghee Podi Uttapam GHEE | घी AS REQUIRED MILAGAI PODI | मोलगाइ पोड़ी AS REQUIRED Cheese Ghee Podi GHEE | घी AS REQUIRED CHEESE | चीज़ AS REQUIRED MILAGAI PODI | मोलगाइ पोड़ी AS REQUIRED SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED) Onion Tomato Uttapam ONION | प्याज़ AS REQUIRED (CHOPPED) TOMATO | टमाटर AS REQUIRED (CHOPPED) GREEN CHILLI | हरी मिर्च AS REQUIRED (CHOPPED) GHEE | घी AS REQUIRED SALT | नमक TO TASTE MILAGAI PODI | मोलगाइ पोड़ी AS REQUIRED FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) Method: In a large bowl add upma rawa, sour curd, water & salt, whisk well to make a lump-free batter, cover & let is rest for 15 minutes. This step is very crucial, the rawa need to rest & soak the moisture. While the batter is resting you can make the Molagai podi. Once rested, the batter will become slightly thick, make sure that you use the perfect measurements. Set a dosa tawa over medium flame & let it heat up. Add eno to the batter & mix well, this will help the uttapam to rise while cooking. Ghee Podi Uttapam Once the dosa tawa is hot, sprinkle some water to balance the temperature, it should sizzle immediately and evaporate. Pour a ladleful of the prepared batter onto the tawa and let it spread naturally into a thick round. Allow it to set slightly, then add ghee around the edges and on top. Cover and cook on the lowest flame for 3–4 minutes, until the bottom turns golden and crisp while the top cooks through. Uncover, add a little more ghee, and sprinkle a generous amount of molagai podi. Your Ghee Podi Uttapam is ready to serve hot. Cheese Ghee Podi Uttapam Pour a ladleful of batter onto the tawa and allow it to spread slightly on its own. Top with grated cheese, cover, and cook on a low flame until the cheese melts and the base becomes crisp. Uncover, drizzle ghee around the edges, and sprinkle molagai podi over the top. Garnish with spring onion greens. Your Cheese Ghee Podi Uttapam is ready. Onion Tomato Uttapam Pour the batter onto the tawa and quickly top it with chopped onions, tomatoes, and green chillies. Sprinkle salt and add some ghee. Cover and cook on a low flame until the base turns golden and crisp. Remove the lid, add a little more ghee, and carefully flip the uttapam. Let the vegetables caramelize nicely. Flip once again, add some more ghee, sprinkle milagai podi, and lastly add fresh coriander.
