These are some of the earliest spring edibles you can find in Tennessee, and they showed up earlier than usual this year. I crossed a couple of streams on the property, found watercress growing in a natural spring, and pulled spring onions along the way. I say watercress in the video — could be bittercress. Doesn't matter. Both edible. At the end I used the foraged greens as garnishes for miso soup and fried rice. If the land is offering free ingredients in the dead of winter, you don't say no.
