I started self-taught cooking when I was seven years old. When I was working in Taiwanese company in Vietnam, I went to learn skills like baking, making dessert and origami flowers on holidays, in which the Cantonese dessert is my favorite. It was my hobby to develop all kinds of desserts in my spare time. For all the self-making desserts, jelly is my favorite. I learned to make all kinds of jelly when I was ten years old. Even the materials of jelly are simple, but they can make up all kinds of combinations. I like to develop my own kinds of jelly, and had some exclusive thoughts for myself. Star lollipop and all kinds of self-developed desserts were my biggest achievements on leisure times. The 3D artistic jelly I sold decades ago, which was also called magic jelly by people in Taiwan a few years ago, in Vietnam we called it 3-dimensional artistic jelly. After more than twenty years in learning to make jelly, there were different stages going on within. At first, I was making simple 3D artistic jelly, mooncake jelly, and after 2016 with the skill becoming more mature, I started to make jelly flower. Colors is one important factor in the changes of jelly. Edible pigments are often used at mixing colors. My son had discovered tumor when he was one year old. Even though it was benign, but still I was anxious about that as a mother, which made me started to rethink the influences for food materials to human body, and stop using pigments made by chemical materials, which were often labeled as edible pigments. I started to research and develop pigments by using natural materials to mixing colors and adding them into the jellies. I used the costly lotus root powder to replace corn starch which most of the people used in the market, and based on the concept of protecting the environment for love of the earth, and to reduce carbon footprint, the materials I used are without animal additives, and I used vegetables, fruits and Chinese herbals to develop the colorful jelly flowers. In 2016, magic jelly set off a craze in Taiwan, and I also joined in this craze. Except for all kinds of jelly flower, I developed the customized jelly for religious groups to worshiping gods.
