A super rich and sophisticated chocolate cake with the wonderful additional flavours of hazelnut, orange and vanilla. Topped with a super glossy chocolate glaze that is sweetened with a little honey. The texture of this cake is delicate and moist. Equipment 2 x 20 cm (8 inch) round cake tins - greased and lined Cake 225 g dark chocolate - melted 225 g unsalted butter - softened 225 g granulated sugar - caster sugar 6 eggs 225 g ground hazelnuts 100 g fresh white bread crumbs 2 teaspoons orange zest ¼ teaspoon salt 1 teaspoon vanilla - extract or sugar Glaze 100 g dark chocolate - chopped 10 g honey 50 g unsalted butter Filling 100 g orange marmalade Instructions Cake Preheat the oven to 180℃ or 160℃ fan assisted Beat the butter until soft. Gradually beat in the sugar until the mixture is light and fluffy. Beat in the eggs, one at a time, scraping down the bowl after adding each one. The mixture will look curdled but this doesn't matter. Beat the melted chocolate into the butter and egg mixture. Mix in the ground hazelnuts, breadcrumbs, orange zest, salt and vanilla. Spoon the mixture into the prepared tins and bake for 25-30 minutes, until the centre is firm to a light touch. Don't overbake or the cakes will be dry. Cool the cakes in the tins. Glaze Melt the chocolate, butter and honey in the top of a double boiler. Stir until melted and smooth. Replace the hot water with very cold water and set the bowl over the cold water. Stir until the glaze thickens enough to spread. Assembly Turn one of the cakes out onto a serving plate and spread with the marmalade. Place the other cake on top. Spread the glaze over the cake with an offset spatula. Let the glaze set for about 20 minutes before cutting into the cake.
