Cut the garlic into thin slices. 2. Pick the leaves off the parsley stems, keep the stems for later, and finely chop the leaves. 3. Peel the shrimp tails and devein them. Separate the heads from the tails, set the heads aside for later, and cut the tails into smaller pieces. 4. Heat a pan over medium heat and add 3–4 tablespoons of olive oil. Add the garlic, parsley stems, and shrimp heads and sauté for 4–5 minutes, gently pressing the heads with a wooden spoon to release their juices and flavor, while cooking the linguine in a separate pot of lightly salted boiling water. 5. Deglaze with the white wine and let it reduce for 2–3 minutes 6. Press the shrimp heads lightly one more time to extract all the flavor, then remove the heads and parsley stems from the pan. 7. Add a ladle of the pasta cooking water to the pan, then add the linguine about 3 minutes before the package cooking time is up and finish cooking it in the pan with the shrimp broth. 8. After about 2 minutes, add the chopped shrimp tails, stir them in, and cook for the last minute until the linguine is al dente. 9.
