In the early dawn, a mist of dew lingers, bringing a coolness so soothing it tempts one to stay a little longer. It feels far more comforting than the intense heat that will be felt in just a few hours. Yet, I hasten my steps, determined not to repeat the regret of the past two days, as I set out to gather the wood apples I missed before. Even from a distance, the fragrance of the wood apple tree drifts through the air. Beneath it, the ripe, pale-colored fruits lie scattered in circles, as if returning their care to the mother tree itself. As I pluck a few unripe fruits, my mouth begins to water, already imagining the tangy achcharu—rich with sugar, salt, and spice. I brought back a basketful of wood apples, and more than half of them I cracked open against a stone, setting them aside to make jam. The pulp of the fruit turns a deep brown, almost black, only after it has fully ripened and fallen. Its flavor, like its rich color, carries an aroma that is simply captivating. Mixing the sweetened, mashed wood apple with thick coconut milk, vanilla ice cream, roasted cashews, and dried strawberries, I made a chilled drink that my father instantly fell in love with. The heat was so intense that the guavas tasted sweeter than honey, though during the rainy season they turn watery and mild. Using guava, Alphonso mango, and wood apple jam, I made layered ice treats, adding whipping cream, condensed milk, and fresh milk. The blend of creamy richness with the vibrant fruit flavors brought both a delightful trio of tastes and a refreshing coolness to the body and soul.
