Ingredients: 1 1/2 cups gluten-free oat flour (or almond flour) 1/2 cup vanilla protein powder (whey or plant-based) 1 tsp baking powder 1/2 tsp baking soda 1 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp ground ginger 1/4 tsp salt 2 large eggs 1 cup canned pumpkin puree 1/4 cup maple syrup or honey 1/4 cup unsweetened almond milk 1/4 cup coconut oil (melted) or olive oil 1 tsp vanilla extract Optional: Chocolate chips or nuts Instructions: •Preheat oven to 350°F (175°C). Line a muffin tin with 12 cups. •Mix dry ingredients: whisk oat flour, protein powder, baking powder, soda, cinnamon, nutmeg, ginger, and salt. •Mix wet ingredients: whisk eggs, pumpkin, maple syrup, almond milk, melted oil, and vanilla. •Combine both mixtures, fold in optional add-ins.
