The new year is in full swing and that means the party is over and real life must kick back into full gear. Whether you work in or out of the home, getting dinner on the table in the business of life can sometimes be daunting. Fear not! Some of you were lucky enough to get a pressure cooker for Christmas and now is the time to employ it! This chicken tortilla soup is a great place to start learning how to use it. Full of flavor, using pantry ingredients, you can get the delicious soup on the table in under an hour, total time. Put this in front of your hungry family on a night when they are tired from going back to work and school and you will make them very happy! #pressurecooker #instantpot #quickandeasy #homemade #recipe #love #noreenskitchen If you are just getting started with your new pressure cooker, be sure to read the manual and learn your settings. Every brand is different. I do not have an "instant pot" brand. I have two PCs. One Power Pressure 6 quart and the one I am using today is my GoWise 10 quart pressure cooker. I like to make lots of soup, when I make soup. Enough for two meals so I can serve half and freeze half. This size is perfect for that reason. This recipe is super easy and uses pantry staples. I have used two quarts of chicken stock (I am using bone broth), a couple cups of water as well as a large can of tomatoes and green chilies and a small can of tomato paste to give this soup a bit of body. The spices really make this soup. Oregano, cumin, garlic power, onion powder, salt, pepper and chipotle all come together to make a mild soup that they whole family will love. I have also added fresh chopped garlic and sliced fresh onion with three boneless skinless chicken breasts. Drop it all in the pot, give it a stir and put the lid on. I set mine for 35/40 minutes on the soup/stew setting. Be sure to check your manual for the best recommendation. This will take time to come up to pressure, cook under pressure and release under natural pressure. I like to use the natural release when using meats because I want this chicken to shred easily. I allowed mine to natural release for 15 minutes then I quick released any remaining pressure before opening the appliance. I removed the chicken and shred it in a bowl then returned it to the soup. Now it's time to serve! We like to top ours with a variety of things such as fresh avocado, fresh chopped onion, fresh, chopped cilantro, shredded cheese, sour cream and crunchy cantina corn tortilla chips. The chips get crushed up in the soup and help to thicken it and give it nice body. That's it! Super simple and delicious and I know your family will love it as much as mine does. This recipe made enough for my family to enjoy this for two meals. The remainder was frozen for another quick weeknight meal in the future!
