Roti is a popular food in Barbados and through out the Caribbean. The Roti is a dough made into a skin that is eaten, wrap with curry stew folded tightly. The stew generally contains potatoes or vegetables and a meat such as chicken, goat, or beef. Recipes calls for 6 cups of flour 2 tsp baking powder 2 tsp sugar 1 tsp salt 2-3 tsp oil Extra flour 2 cups warm water Combine flour, baking powder, sugar, salt and oil together. Add warm water into well of flour and combine making a sticky dough Divide dough into 10 to 12 pieces, roll into ball and let rest for 15 minutes After 15 mins roll dough out with rolling pin layer with oil and butter or just oil and sprinkle with flour cut in center and roll in cone ( see video for details let rest for 15 minutes. After 15 mins sprinkle with a little flour and with rolling pin roll dough into a circle, place dough onto a round heated pan, brush with oil and flip, oil again and flip for about 2 mins remove from pan and clap causing layers to break Enjoy a delicious roti skins wrapped in curry meat.
