It doesn't get easier than this no bake single serve banana cream pie for one. A shortbread cookie base topped with vanilla pudding and sliced bananas and then finished off with some whipped cream. The perfect cross between banana cream pie and banana pudding. For printable recipe go here: https://www.yourhomebasedmom.com/wprm... Ingredients 2-3 shortbread cookies. Can also use vanilla wafers or graham crackers 1/2 cup whole milk 3 Tbsp granulated sugar 1 1/4 -1 1/2 Tbsp cornstarch 1/4 cup heavy cream 1/2 tsp vanilla 1/2 Tbsp salted butter Directions Line the bottom of a dessert dish with cookies. In a small saucepan, combine whole milk and sugar, Mix to dissolve sugar. In another small bowl combine heavy cream and cornstarch, Whisk to dissolve corn starch. Heat milk and sugar mixture on stove, just until milk begins to steam and bubble around the edges, don't boil. Add in cornstarch mixture and stir until pudding thickens. Remove from heat. Add in butter and vanilla extract.. Stir until melted. Pour into a bowl and cover the surface of the pudding with plastic wrap. Place in refrigerator until chilled. Assemble banana cream pie. Add a layer of pudding, a layer of bananas and alternate until you have used all the ingredients, ending with pudding. Top with some whipped cream if desired. Keep refrigerated until ready to eat. Note: In the video I used 1 1/2 Tbsp of cornstarch but have found that you could cut it back to 1 1/4 Tbsp.
