Lemon ice cream is delicious summery treat that is even better with crunchy merignue pieces 🤤 You should definetly try this ice cream. Just make sure your meringue is VERY dry. 500g Double/Heavy Cream 250g Full Fat Milk 170g Sugar 2.5g Vanilla Extract 30g No Fat Milk Powder 1 Whole Large Lemon Rind Pre Chill your ice cream machine if you use a condenser type, for 10 minutes. Put all the ingredients in to your bowl and mix well to combine. Once combined, transfer to your ice cream machine and churn for approx 30 mins or until you acheive soft scoop consistancy. Once ready, start layering the meringue and lemon curd in with the ice cream and pop the finished tubs in the freezer to harden up.
