Follow me : Twitter : / thefrugalchef Facebook : / 245282282242 Instagram : / thefrugalchef How to make red enchilada sauce from chili pods recipe - Makes about four cups of sauce 4 ancho chiles — stemmed and seeded 1 cup chopped onion2 garlic cloves — minced 1 cup tomato purée or sauce 2 cups chicken broth 2 teaspoons ground cumin 1 teaspoon oregano (preferably Mexican) Salt & Pepper Oil Place the seeded chillies into a dry hot skillet and blister and char them a bit. Flip them occasionally and press down with a spatula. Work in a well ventilated place. Place the chillies in a bowl and cover them with boiling water. Weigh them down with a small plate and let them soak them for 30 minutes. Add a little oil into the same skillet and heat. Add the onions and cook them for a few minutes until they are softened and translucent. Add the garlic and mix. Cook for a couple of minutes until fragrant. Place the soaked chillies in a food processor or blender with about 1/2 cup of the liquid they soaked in. Add the onions, puréed tomatoes and chicken stock. Process it and strain it into a clean skillet. Add the cumin and oregano, mix well and simmer for about 20 minutes. Season it with salt and pepper. Taste and adjust the salt. Your sauce is ready to be used. Store it in the fridge, in a closed container for a coupe of weeks. You can also freeze for about two months.
