Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with me. Today I will be preparing Sunday dinner & lunch prep for the week. We will be roasting rooted vegetables, bake chicken, beef stew and bake fresh bread. Roast Rooted Vegetables Ingredients: 2 16oz frozen bags of root blend vegetables (Beets, Carrots, Sweet Potato and Parsnips) 1/4 cup Olive oil 1 teaspoon cayenne pepper (optional) 1 teaspoon potato seasoning 1 teaspoon ground onion powder 1 teaspoon ground garlic powder 1 teaspoon black pepper 1/2 teaspoon salt or to taste Instructions: 1. Preheat oven at 375 degrees F 2. In a medium bowl add both bags of root blend, olive oil, cayenne pepper, potato seasoning, onion and garlic powder, black pepper and salt 3. Stir until all vegetables are evenly coated with oil and spice. 4. Brush large rimmed baking sheet with remaining 1 tbsp olive oil. Spread the vegetables out evenly on the baking sheet. 5. Roast the vegetables in the oven for 15 minutes. Stir the vegetables, bringing the chunks from the outside towards the center and the chunks in the center out towards the edges. Return baking sheet to oven and continue to roast until the largest chunks are tender and the edges are starting to turn golden/dark, another 15-25 minutes. 6. Before you remove roasted vegetables season with additional salt and pepper to taste, if desired. Vegetables can be served warm or at room temperature. Bake Chicken: Ingredients: 8 chicken drumsticksabout 2 lb 2 Tbsp olive oil 1 tsp salt ½ tsp ground black pepper 1 tsp garlic powder 1 ½ tsp paprika ¼ tsp ground oregano 1 tsp onion powder 1 teaspoon cayenne pepper (optional) 1 teaspoon no salt seasoning 1 teaspoon chicken seasoning powder Juice of half lemon Instructions: 1. Preheat the oven to 425 degree F. 2. Prepare a baking sheet or baking pan. Set aside. 3. Wash drumsticks in water and vinegar. Place into a bowl or resealable plastic bag. Add all seasonings oil and toss until chicken is coated. 4. Place drumsticks on the baking sheet or in baking pan. Cover with foil for the first half of cooking time. Place in a preheated oven and bake for 40-45 minutes or until the internal temperature is 165 degrees or higher. Enjoy Beef Stew: Ingredients: 2 pounds Beef Chuck Roast, cut into 2-inch chunks, excess fat removed 1 teaspoon Salt 1 teaspoon No Salt Seasoning ½ teaspoon Ground Black Pepper 2 tablespoons Gluten-free All-Purpose Flour, or Whole Wheat for non-gluten 2 tablespoons Coconut Oil or Olive Oil 2 tablespoons Trinidad Green Seasoning ½ medium or 1 small Yellow Onion, Chopped Large 1 Green Bell Pepper 4 Garlic Cloves, minced ½ cup red wine optional 1 Large Carrot, or two small-medium, cut into 2-inch chunks 2 Yukon Gold Potatoes, diced into 2-inch pieces 4 ribs celery cut into 1 inch pieces 1 tablespoon Beef Bouillon (Diluted) 2 Cups Beef Broth / Stock (optional) ¼ Cup Tomato Paste 1 tablespoon Worcestershire Sauce 2 tablespoons cornstarch or as needed Instructions: 1. Heat cooking oil (olive oil) in a large Dutch oven or pot. 2. Add flour and make a roux (you can combine flour, garlic powder and salt & pepper. Toss beef in flour mixture. 3. Add tomato paste combine with roux 4. Add beef combine with roux mixture (at this time you can wine) add water (beef broth) and stir to prevent lumps. Add marinate from beef 5. Reduce heat to medium low, cover and bring to boil for 5-10 minutes 6. Add the Onion, Garlic Cloves, Carrot, Potatoes and Celery to the Dutch oven, and cook, stirring occasionally, for 2-3 minutes. 7. Add broth or hot water and the diluted beef bouillon 8. Reduce heat to medium low, cover and simmer 1 hour or until beef is tender (up to 90 minutes). 9. (If needed) Mix equal parts cornstarch and water to create a slurry. Slowly add the slurry to the boiling stew to reach desired consistency (you may not need all of the slurry, if you'd like a thicker stew, you can add extra).
