Ingredients: Chia seeds – 6 tbsp Maple syrup – as required for sweetness Coconut milk – 200 ml Fresh strawberries - 2 boxes • Take a container and add 6 tbsp of chia seeds and add the coconut milk. Give a stir to mix well and then keep it in the fridge for 1 hr or till the chia gets soaked and becomes soft. • In the mean time we will prepare the strawberry puree. I have cut 7- 8 strawberries to small pieces. • Take a pan and boil a glass of water and add the chopped strawberries. Cook for a min and strain to remove water. • Let it cool for some time and make a fine paste using your mixer. Now take the puree in a bowl and add maple syrup to add some sweetness, as strawberries might be a bit sour at times. • My puree is ready. Chop some more strawberries and keep it in a bowl. After an hour, take a glass or bowl and add 3-4 tsp of strawberry puree. • Now add 4-5 tbsp of chia pudding into the glass and add chopped strawberries on top of it. Add some maple syrup on it for some sweetness. • If you don’t have maple syrup you can add some honey and replace maple syrup with it. Adjust syrup or honey as per your taste. • Now garnish the pudding with a mint leave and enjoy!
