Its chemical composition makes this stainless steel one of the most sought out stainless knife steels. Its high carbon content of 0.95 - 1.20% gives it a unique hardness which is essential to maintain a good sharpness. With a 16 - 18% of chromium content, AISI 440C is a martensitic chromium steel.
