তাল-পাটালীর গ্রাম || তালের রসে চুন কেন দেয় ? তেলের রসে গুড় বেশি হয় কেন ? কিভাবে তাল পাটালী হয় ||palm ......................................... নমস্কার সুধীদর্শক জীবন আর জীবিকা চ্যানেলে আপনাদের স্বাগত। আজকে আপনাদের নিয়ে যাব গ্রাম বাংলার আরেকটি নতুনগ্রাম এই গ্রামটি অবস্থিত দক্ষিণ ২৪ পরগনা জেলার ডায়মন্ড হারবারে কাছে গ্রামের নাম জেলিয়াবাড়ি থানা মন্দির বাজার। ডায়মন্ড হারবার বাদ দিউলা স্টেশন থেকে আপনারা এই গ্রামে যেতে পারেন। এই গ্রামের বহু মানুষ তাল গাছের রস সংগ্রহ করে সেই রসের গুড় ও পাটালি তৈরি করে তাদের জীবন আর জীবিকা নির্বাহ করেন । পরিবারের সকলে মিলে এই তালের রসের গুড় তৈরি করেন। এই গ্রামের প্রায় ১০ থেকে ১২ জন শিউলি, যারা তাল গাছ কেটে গুড় তৈরি করে তাদের জীবিকা নির্বাহ করে । তালগাছ কাটা শুরু হয় চৈত্র মাসের শুরুতে । একটি গাছ থেকে প্রায় ১০ থেকে ১২ টি মৌচ বের হয় তবে ভালো দেখে ৪/৫ থেকে ৬টি মোচ রাখা হয়। বাকি মোচ কেটে ফেলে দেওয়া হয়। তালগাছ দু ধরনের হয়, ছেলে গাছ এবং মেয়ে গাছ । উভয়ে গাছি রস হয় । তবে গাছের রসের পরিমাণ গাছের উপরে নির্ভর করে। একটি তালগাছ কাটার জন্য শিউলিকে তিনবার গাছে উঠতে হয়। সকাল বেলা গাছ কেটে রস নামিয়ে নিয়ে আসা হয়। আবার দুপুর বেলা গাছের মোচগুলোকে আবার একবার কেটে দিতে হয়। আবার বিকেলে গাছে উঠে মোচ কাটা হয় এবং গাছ কাটা হয় । তালের রস ও খেজুরের রসের মধ্যে অনেক তফাৎ আছে। তালের রস অনেক মোটা ঘন এবং মিষ্টি তালের রস থেকে অনেক বেশি গুড় পাওয়া যায় সেই তুলনায় খেজুরের রস অনেক পাতলা এবং মিষ্টি কম এবং গুড়ো হয় কম। এই রস দিয়ে চাষিরা গুড় এবং পাটালি তৈরি করেন। আপনারা চাইলে এই গ্রাম থেকে গিয়ে তালের রস গুড় ও পাটালি সংগ্রহ করতে পারেন এখানে গেলে আপনারা তারের রসের খাঁটি গুড় পেয়ে যাবেন। তবে পাটালিটা খাঁটি পাওয়া মুশকিল কারণ পাটালিতে সামান্য চিনি দিতে হয়। তবে গুড় আপনারা খাঁটি পেয়ে যাবেন চাষির যোগাযোগ নম্বর -7031203670 ঠিকানা - ডামণ্ডহারবার থেকে দেউলা মোর সেখান্থেকে জেলিয়াবারি গ্রাম। আপনার বা আপনার এলাকার কোন শিল্প বা কাজ , এই চ্যনেলে দেখাতে চাইলে আমাকে এই নম্বরে call বা whatsapp করুন -9830858983 [email protected] .......................................... Many people of this village collect palm sap and make molasses and patali from that sap and make their life and livelihood. All the family members make this palm juice jaggery. About 10 to 12 Shiulis of this village earn their livelihood by cutting palm trees and making jaggery. Cutting of palm trees starts at the beginning of the month of Chaitra. About 10 to 12 beehives are produced from one tree but 4/5 to 6 beehives are kept at best. The rest of the sprains are cut off and thrown away. There are two types of palm trees, male trees and female trees. Both have vegetable juice. However, the amount of sap depends on the tree. To cut a palm tree, Shiuli had to climb the tree three times. In the morning the tree is cut and the sap is brought down. Again in the afternoon, the sprigs of the trees have to be cut once again. Again in the afternoon the tree is sprained and the tree is cut. There is a lot of difference between palm juice and date palm juice. Palm juice is much thicker and sweeter than palm juice and has more molasses than palm juice which is thinner and less sweet and less molasses. Farmers make jaggery and patali with this juice. If you want, you can go and collect palm juice jaggery and patali from this village. If you go here, you will get pure tar juice jaggery. But it is difficult to get pure patali because little sugar is added to patali.
