Fr. Dan’s Empire Chocolate Chip Cookies • Flour: 7 1/3 cups • Baking Soda: 2 ½ Teaspoons • Baking Powder: 3 Teaspoons • Coarse Salt: 3 Teaspoons • Butter: 5 Sticks at room temperature • White Sugar: 2 Cups + 4 Tablespoons • Brown Sugar: 2.5 Cups • Vanilla: 2 Tablespoons • Eggs: 4 • 60% Cacao Chocolate Disks: 4 bags or 40 Ounces • Sea Salt (optional) 1. Preheat oven to 350 Degrees (Only if skipping step 12). 2. Mix dry ingredients (except coarse salt) together and then sift them to ensure there are no lumps. 3. Add coarse salt into sifted dry ingredients. 4. Add room temperature butter, white sugar, and brown sugar to a stand mixer or bowl. 5. Beat butter and sugar mixture for 5 minutes on medium to low speed. 6. Crack and beat one egg at a time into the butter and sugar mixture. 7. After all eggs are incorporated, add in the vanilla and beat until combined. 8. After all the wet ingredients have been mixed together, add your dry ingredients to the mixer and mix until combined. 9. Fold the chocolate disks into the batter by hand or use the stand mixer on the slowest speed as not to break the disks up. 10. Line your baking sheets with parchment paper. 11. Using a 3 tablespoons scoop, scoop out the cookie dough onto the lined baking sheet. 12. Once all the cookie dough has been scooped, sprinkle the cookies with sea salt (optional) and rest the dough in the fridge overnight (optional). 13. Bake for 14 minutes. 14. Place directly onto a cooling rack. 15. Enjoy and go Pilots!
