India is the second largest producer of vegetables in the world with an area and production statistics of 10106 thousand hectares and 169064 thousand metric tons respectively. But about 20 to 30% of the produce is lost annually due to lack of adequate infrastructure and limited use of postharvest technologies. Recently, nanotechnology has emerged as a promising tool, providing new insights about postharvest technologies on produce storage. Nanotechnological approaches can contribute through the design of functional packing materials with lower amounts of bioactive ingredients, better gas and mechanical properties and with reduced impact on the sensorial qualities of the vegetables. Recently herbal edible coating has emerged as a new technique for food industry. Most common herbs used in Edible coatings are Aloe vera gel, Neem, Lemon grass, Rosemary, Tulsi and Turmeric.
