Elephant Yam(ചേന)- 3 Cups(Cut in to small cubes) 2. Salt- 1 Teaspoon while cooking + 1/4 Teaspoon finally to adjust taste. 3. Turmeric Powder- 1/4 Teaspoon 4. Onion- 1 No. 5. Garlic- 5 Cloves 6. Curry Leaves- 1 String 7. Kashmiri Chilly Powder- 1 Teaspoon 8. Coriander Powder- 1 Teaspoon 9. Black Pepper Powder- 1/2 Teaspoon 10. Coconut Oil/ Vegetable Oil- 2 Table spoons 11. Mustard Seeds- 1/2 Teaspoon STEPS TO PREPARE 1. First we can cook the elephant yam. For that we can put cut elephant yam to a pot, add 1/4 teaspoon turmeric powder and 1 teaspoon salt. Then add water to cover entire yam and cook until it is soft. Don't be over cooked. 2. By the time we can get ready with other ingredients. 3. Once elephant yam is coked, we can drain the excess water. Then we can put a pan on stove, add two table spoons of cooking oil. Once oil is hot add half teaspoon of mustard seeds and crackle it. Then we can add smashed garlic cloves and stir for ten seconds. Then add curry leaves and stir for few seconds. Now we can add chopped onion and stir well. 4. Once onion is cooked, we can add one teaspoon kashmiri chilly powder, one teaspoon coriander powder, half teaspoon pepper powder and stir well until its raw smell gone. 5. Then we can add cooked elephant yam and mix well. This time we can check whether we are added proper salt. Otherwise we can add salt according to our taste. Here I have added 1/4 teaspoon salt to get my taste. 6. We can wait until it is dry. Once it is dry we can switch off stove and transfer to serving dish.
