The recipe for my Oktoberfest Hot Dogs with Homemade Sauerkraut is available below. Hi lovelies, on the 17th of October was the official Oktoberfest opening and the celebrating has started full on this weekend here in Germany. That is why I thought I would bring you something that would fit this season. I took different German flavours and combined them in a delicious Oktoberfest Hot Dog. For this recipe I made my own Sauerkraut and let me just tell you, homemade sauerkraut is so easy to make and it tastes absolutely amazing! Enjoy! :) Ingredients: (makes 4 hot dogs) Sauerkraut: one big cabbage (you can use red or white cabbage) 1 1/2 - 2 tsp salt (you need to use a salt with no add-ins like sea salt or kosher salt) Hot Dogs: 4 hot dog buns 4 eggs, hard boiled 2 tbsp mayonnaise salt and pepper to taste sauerkraut pickles fried onions mustard It is really important that the sauerkraut is covered with the liquid before you store it. I used a freezer bag and glass bottle filled with water to weigh down the cabbage. You could also use a small jar or canning weights. If you notice after 24 hours that there is still not enough liquid to fully cover the cabbage, you can mix 1 tsp of salt with 230ml (1 cup) water and add just enough to your jar to cover the cabbage with liquid. You don't want to close the jar air tight, you just want to cover it to avoid any dust getting in. This way the bubbles that form during the fermentation process will be able to escape. After the third day start tasting the sauerkraut and when it tastes the way you want close the jar or transfer the sauerkraut into smaller jars. The ready sauerkraut keeps at least 2 months at cool, dark place (cellar) and even longer in the fridge. Preparation instructions in the video.
