Meal prep recipes to prepare us for a busy week ahead These steps help me reset my mind and body, reduce stress and overwhelm, and boost my productivity and creativity ahead of a new week. Loads of love, ellen xxx Banana Bread 120ml veg or sunflower oil 60ml honey 2 eggs 1 tsp ground cinnamon 4 ripe bananas (important they are ripe or the cake lacks sweetness) + 1 banana to top 220g self-raising flour 1. preheat oven to 180c and line a loaf tin 2. combine all wet ingredients (oil, bananas, honey, eggs) 3. add cinnamon and self raising flower and mix well 4. pour into loaf tin, cook for 35-45 mins or until skewer comms out clean @thegreedymodel recipe on insta follows a similar recipe but i didn't have some of the ingredients! Butterbean Dip - Adjust quantities for your taste - i think of cooking as an art not a science, so if you like it citrus-y, add more lemon, if you like it spicier - add more cayenne pepper :) 1 can butterbeans (500g) Juice of half a lemon 1 garlic clove 2 tablespoons of olive oil Sprinkle of cayenne pepper Salt & pepper to taste 1. add all ingredients to food processor 2. pour into serving dish and top with olive oil, sprinkle of salt and cayenne pepper 3. enjoy! Bircher Museli Feel free to adjust quantities to your taste! :) 1 apple 50g oats 20g chia seeds 140ml yoghurt of choice (i prefer greek or coconut) 1tsp cinnamon 2 tbsp milk of choice 20g desicated coconut 1. grate apple 2. add all ingredients together in a bowl and mix well 3. top with the milk and coconut 3. add to storage container and leave in the fridge to soak overnight 4. top with fruit/nuts/honey/cinnamon - or any topping preference - and enjoy! Salad dressing Combine in a container 2 parts olive oil to 1 part lemon juice, a tsp of dijon mustard and salt and pepper. Shake to combine before serving!
