INGREDIENTS The dough 1/2 cup of semolina flour and a cup of all purpose flour 1/2 cup water 1/2 teaspoon of salt The filling 2 medium potatoes 1/4 teaspoon salt 1/2 teaspoon cumin 1/2 teaspoon of chilli hareessa or chopped hot chilli 2 tablespoons chopped cilantro AND 1/4 cup of all purpose flour for rolling Oil to cook HOW TO : Mix flour, salt and water together and knead to make a soft dough. Let the dough rest covered for around ten minutes. FOR THE FILLING Boil 2 medium potatoes peeled and cubed with 2 cups of water. After the water comes to a boil, reduce the heat to medium. Let the potatoes cook until they are tender. Once tender, remove them from the water and put them aside till they are completely dry. Add the Haressa or the chopped chilli, cilantro, cumin, and the salt to the mashed potatoes. Divide the dough and potato mixture into 4 equal parts. Using a rolling pin roll the dough into circles like demonstrated in the video. Place the potato balls in the center. Seal by pulling the edges of the rolled dough together to make a ball. Let them settle for 3 to 4 minutes before rolling them. Heat a heavy bottom or an a seasoned cast iron skillet on medium high. Roll the dough potato balls into wide circles making sure they are not sticking to the rolling pin or the work surface. Cook for about one minute till the surface start changing color then flip the stuffed bread. Flip again till you see brown spots then brush with the oil and flip. Knead the ball of dough for about 3 minutes, adding flour as necessary to keep the dough from sticking. cover the dough and let it rise until double in size, about one hour. After it rises, gently flatten the dough and cut it into 8 equal pieces. Roll out the small ball of dough, spead the cheese and top with an other rolled dough ball. Heat a heavy bottomed skillet or a seasoned iron skillet over medium heat. Working with one ball at a time, roll it out until it is about ¼ inch thick or approximately 6 inches in diameter. Place the rolled out dough onto the hot skillet and cook until the under side is golden brown and large bubbles have formed on the surface watch the video for the how to.
