Instructions 1. Prepare the ginger. Wash the ginger well. Peel the skin and trim away any blemished or damaged spots. Cut the ginger into small pieces for easier blending. 2. Prepare the garlic. Separate the garlic cloves and peel them. Trim the root end of each clove and discard any damaged parts. 3. Blend the ginger and garlic. Add the ginger pieces to a blender first. Add 3–4 tablespoons of water and blend into a smooth paste. Next, add the garlic cloves to the blender and blend into a smooth paste. Do not add water or any other liquid while blending the garlic. 4. Transfer to freezer bags. Add the ginger paste to a freezer-safe ziplock bag. Spread it into a thin, even layer. 5. Mark the squares. Using the opposite side of a knife, gently press lines on the bag to mark small squares. This will make it easier to break into portions later. 6. Repeat with garlic. Transfer the garlic paste to another freezer bag. Spread it evenly and mark squares the same way. 7. Freeze. Place the bags flat in the freezer and freeze for 4–5 hours or overnight. 8. Use when needed. Once frozen, break along the marked lines and use the ginger or garlic portions directly in cooking.
