Cream of Mushroom Soup Prep time 15 minutes Cook time 35 minutes Serves 4 Ingredients: Olive oil 2 tsp Butter ½ tbsp Onion 1 ½ cup (sliced) (1m medium sized onion or 160g) Garlic 3 big cloves (15g) Mushrooms 500g Salt 1 ½ tsp or as per your taste Black peper ¼ - ½ tsp or to taste Whole wheat flour 2 tbsp Milk 2 cups Water 2-3 cups (to adjust consistency) Cilantro for garnishing Instructions: 1. Prep the vegetables: Gently wash the mushrooms and pat them dry. Slice the mushrooms and onion. Finely chop the garlic. 2. Sauté onion and garlic: Heat olive oil in a pot over medium heat. Add sliced onion and ¼ tsp salt. Sauté for 2–3 minutes until lightly golden. Add garlic and sauté for a few seconds until fragrant. 3. Cook the mushrooms: Add sliced mushrooms and ½ tsp salt. Turn the heat to high. The mushrooms will release moisture and shrink in size. o Let the water evaporate on high heat (no need to stir while it’s watery). o Once the moisture evaporates, stir and let the mushrooms brown slightly from the bottom. 4. Blend a portion: Scoop out about ¾ of the mushroom-onion mixture and let it cool slightly. Blend it into a smooth purée with 1 cup water. 5. Make the creamy base: Reduce heat to medium-low. Add butter to the remaining mushrooms in the pot and mix well. Add whole wheat flour and sauté for 1 minute. 6. Add milk gradually: Slowly pour in the milk while stirring continuously so the flour doesn’t stick or form lumps. This creates a creamy base. 7. Combine and simmer: Add the mushroom purée to the pot. Mix well. Add remaining salt (as needed) and black pepper. Adjust the consistency with water (2–3 cups total, as needed). Simmer on low heat for 2–3 minutes. 8. Serve: Taste and adjust seasoning. Garnish with finely chopped cilantro/coriander leaves. Serve hot and enjoy!
