Courgette / Zucchini and Potato Patties - Easy recipe!

How do I cook Courgettes / Zucchini? I've got too many Courgettes! What should I do with all of them? It's coming to that time of year when the courgettes / zucchini are growing like crazy and very often there are so many of them we run out of ideas for cooking them. They can be eaten raw in a salad and are very useful for padding out a grated salad and add extra nutrition in the form of fibre, antioxidants and a range of vitamins and minerals. This is a very simple recipe with hardly any ingredients. As usual I am cooking this from scratch only using ingredients that I have in stock and in this recipe I'm using some leftover cooked potatoes too. I'm using one cougette/zucchini - grated, salted and drained of excess water. A small quantity of leftover cooked potatoes - I'm afraid I don't know the weight or the type of potato. One spring onion 2 level tablespoons gram flour Fresh sage and rosemary from the garden Black pepper Salt Olive oil This is a bit of a throw together meal and the idea behind these videos is to encourage you to use up what you have and be creative with your cooking and flavours.
