The sun is shining (most days), the birds are chirping, flowers are popping up. To celebrate Beltane I made a variety of kitchen witch recipes to share with a crowd. This vegan cheese alternative was a huge hit at the celebration. Although I am not vegan or vegetarian I wanted to create something delicious for my pals. A lot of vegan cheese alternative recipes contain agar powder which is hard to find here in the maritimes. Agar powder is made from algae and acts as a gelatin to help solidify the vegan cheese alternative. Even if I could get my hands on it, it would be expensive to buy for one recipe, since I typically buy cheese anyway. This recipe is pretty easy to make and most things are easy to find. The cashews in the baking isle of your store typically are cheaper than the cashews you find in other isles of the store, alternatively you can buy cashews at a bulk store like I did, along with the nutritional yeast. Nutritional yeast gives this recipe its cheesy flavour, while the cornstarch helps thicken and solidify the vegan cheezzzze. At the celebration, we served this cheezze on toasted baguette, with a sliced strawberry on top, a drizzle of honey for those who eat it, and top it off with a piece of basil. Because this was such a huge hit at the party, this video contains no strawberries or honey because I am out! That being said, it is still delicious on a piece of toasted bread. Enjoy!
