Rokusuke Salt — Rokusukehonpo ろく助の塩 ー ろく助本舗 https://www.rokusuke-honpo.com/item08... ————Tempura 🍤 Recipe—————— Ingredients (2–3 servings) • Shrimp: 6 • Seasonal vegetables (pumpkin, eggplant, bell pepper, shishito pepper, sweet potato, etc.): as needed • Cake flour (all-purpose flour also works): 100 g • Cold water: 150 ml • Egg: 1 • Oil for deep-frying (vegetable oil or rice oil): enough for frying ⸻ Instructions 1. Prepare the ingredients • Peel the shrimp, remove the vein, and cut off the tip of the tail. Press out any water from the tail. • Make a few small cuts on the belly side of the shrimp to straighten them. • Cut vegetables into bite-sized pieces. Pat dry if watery. 2. Make the batter • In a bowl, lightly mix the egg with cold water. • Add the flour and stir briefly—leave it a little lumpy. (Do not overmix!) 3. Fry • Heat oil in a pot to 170–180°C (340–355°F). • Lightly coat shrimp and vegetables with flour, dip in batter, and fry. • Fry shrimp by holding the tail and sliding them into the oil. Fry vegetables a few at a time. 4. Finish • When the coating is golden and crispy, remove and drain excess oil. • Serve with tempura dipping sauce (made with dashi, soy sauce, and mirin) or just a pinch of salt. ————Sweet Potato Rice 🍠 Recipe————— Ingredients (serves about 3–4) • Rice: 2 cups (about 300 g) • Sweet potato: 1 small (200–250 g) • Water: 360 ml (after soaking and draining the rice) • Sake: 1 tbsp • Salt: 1/2 tsp • Black sesame seeds: a little (for garnish, optional) ⸻ Preparation 1. Wash the rice and let it soak in water for 30–60 minutes, then drain. 2. Wash the sweet potato well, cut it into about 1.5 cm cubes. (Soak in water for 5–10 minutes to remove excess starch and prevent discoloration.) ⸻ Instructions 1. Put the rice and water into the Staub pot. → Add sake and salt, and gently stir. 2. Place the sweet potato cubes evenly on top of the rice. (Do not mix them in yet.) 3. Cover with the lid and cook over medium heat. → When it starts to boil and steam comes out steadily, reduce to low heat and cook for 12 minutes. 4. Turn off the heat and let it steam for 10 minutes with the lid on. 5. Open the lid and gently mix the rice and sweet potatoes together. 6. Serve in bowls and sprinkle with black sesame seeds. ⸻ ✨ Tips • Keeping the sweet potato skin makes the dish look colorful. • If you like it sweeter, reduce the salt slightly and add a splash of mirin.
