I’m Shivani, and on this channel, I share simple, tasty, low-carb, high-fat recipes that fit perfectly into a healthy lifestyle. So tell me— Do you also struggle with snack ideas that are healthy, filling, and LCHF-friendly? If yes, today’s recipe is just for you. Today, I’m making something super easy, protein-rich, and absolutely delicious— Baked Zucchini Cheese Protein Bites. They are soft on the inside, slightly crispy outside, and perfect for evening snacks, kids’ tiffin, or party starters—without guilt. Ingredients- 1-One medium zucchini, grated. 2-One egg (1)for binding and protein. 3-almond flour (60 g)to keep it low-carb. 4-Parmesan cheese (30 g) for flavour and saltiness. 5-cottage cheese(170 g)- for softness and extra protein. Now, here’s a small tip— After grating the zucchini, add salt and rest it for 5 min then lightly squeeze out the excess water. This helps the bites hold their shape better. Add everything into a mixing bowl. Mix it really well until you get a soft, slightly sticky mixture. Now take a measuring spoon, scoop the mixture, and make small, small balls—this helps them cook evenly. Place them on a baking tray lined with parchment paper. Bake in a preheated oven at 180 degrees Celsius for 30 minutes, or until they turn lightly golden. And that’s it— Your healthy, LCHF zucchini bites are ready! You can enjoy them hot with green chutney or a simple hung curd dip. Trust me, they are light on the stomach, high in protein, and very satisfying.
